Fried Catfish

Served with coleslaw or sweet potato fries, and get ready for smiles!

Prep: 15 min. Cook: 5 min./batch Serves: 4


  • 2 eggs
  • 2 Tbs. carbonated water
  • 1 c. pancake mix
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. pepper
  • 4 catfish fillets (6 oz. each)
  • oil for deep-fat frying





  1. Whisk eggs and water in a shallow bowl. Combine the pancake mix, seasoned salt and pepper in another shallow bowl. Dip fillets in egg mixture, then coat with seasoned pancake mix.
  2. Heat oil to 375 degrees in an electric skillet or deep-fat fryer. Fry fillets, a few at a time, for 2-3 min. or until golden brown. Drain on paper towels.
