- Sprinkle four 6 oz. boneless skinless chicken breast halves with salt and pepper. In a large skillet, cook chicken in 1 Tbs. butter over med. heat for 6-8 min. on each side or until a thermometer reads 170 degrees. remove and keep warm. Combine 1/2 c. blueberry preserves, 1/3 c. raspberry vinegar, 1/4 c. fresh or frozen blueberries and 3 Tbs. Dijon mustard in skillet. Bring to a boil; cook and stir until thickened. Serve with chicken. Sprinkle with minced fresh basil if desired.
