- 3 Tbs. butter, divided
- 1 pkg. (20 oz.) refrigerated diced potatoes with onion
- 1 pkg. (7 oz.) brown-and-serve sausage links, sliced
- 1 small green pepper, chopped
- 1 small sweet red pepper. chopped
- 1/4 tsp. salt
- Dash of cayenne pepper
- 1 cup (4 oz.) shredded Swiss cheese
- 8 eggs
- 1/4 tsp. pepper
- hot pepper sauce, optional
- Melt 1 Tbs. butter in a large skillet over med. heat; stir in potatoes, sausage, green and red peppers, salt and cayenne. Cover and cook for 12-14 min. or until potatoes and vegetables are tender, stirring occasionally. Stir in cheese.
- Frey eggs in remaining butter in a large skillet. Sprinkle with pepper. Serve with hash and pepper sauce if desired.
