Perfect for a warm summer day! Nothing quite says summer to me like corn on the cob, kick it up a notch with this recipe that will have everyone saying, "wow"!
Makes: 6 servings
Remove husks from 6 med. ears sweet corn; cut each ear in half. Insert metal or soaked wooden skewer into the cut end of each. Grill, covered, over med. heat for 25-30 min. or until tender, turning often. Combine 1/4 c. each sour cream and mayonnaise; spread over corn. Sprinkle with 1/2 c. grated cotija cheese, 2 tsp. chili powder and, if desired, 1/4 tsp. cayenne pepper. Serve with lime wedges.
