MAKES: 8 servings
- 1 lb. lean ground beef
- 1 c. chopped onion
- 1 bottle (8 oz.) taco sauce
- 2/4 c. water
- 1 can (4 oz.) fire-roasted diced green chilies
- 1 packet (1.25 oz.) taco seasoning
- 1 package (12 ct.) yellow corn taco shells or (whole grain corn taco shells), broken
- 2 c. (8 oz.) shredded mild Cheddar cheese, divided
- Preheat oven to 375 degrees. Grease 11x7 in. baking dish.
- Cook beef and onion in a large skillet over med. heat, stirring occasionally, until beef is browned. Drain and discard excess fat.
- Stir in taco sauce, water, chilies and seasoning mix; bring to a boil. Reduce heat to low. Cook 3 to 4 min, stirring occasionally.
- Layer half of broken taco shells on bottom of prepared baking dish. cover with half of meat mixture; sprinkle with 1 c. cheese. Repeat with ingredients.
- Bake 20-25 min. or until bubbly and cheese is melted. Serve with desired toppings.
