Summer's Best Spinach Salad

Prep/ Total time: 10 min. Serves:4


  • 3 c. fresh baby spinach
  • 5 canned apricot halves, drained and quartered
  • 1 med. ripe avocado, peeled and sliced
  • 1/2 c. ranch salad dressing
  • 1 1/2 tsp. minced fresh cilantro
  • 1/2 to 3/4 tsp. grated lime peel









  1. Combine spinach, apricots and avocado in a large serving bowl. Combine the remaining ingredients in a small bowl; drizzle over salad.
