- 2 pkgs. (7.6 oz. each) frozen lemon butter grilled fish fillets
- 1 Tbs. olive oil
- 2 med. yellow summer squash, halved and sliced
- 2 med. sweet orange peppers, chopped
- 1/2 c. chopped red onion
- 2 c. fresh salsa, drained
- 4 oz. feta cheese, cubed
- 2 pkgs. (8.8 oz. each) ready-to-serve rice pilaf with orzo pasta
- Cook fish fillets in oil in a large skillet over med. heat, for 15-20 min. turning once, or until fish flakes easily with a fork; remove and keep warm
- Saute squash, peppers and onion in the same skillet until tender. Add salsa; cook 2 min. longer. return fish to skillet. Add cheese and heat through.
- Prepare the rice pilaf according to package directions. Serve with fish and vegetables.
