Hearty Pita Greek Salad

Greek flavors combine in perfect harmony for a main dish you won't be able to stop munching. Serve this with a glass of lemonade or iced tea!


Prep/ Total cooking time: 25 min.
Serves 4



  • 2 Whole pita breads
  • 2 Tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper 3/4 lb. ground beef
  • 3/4 c. Greek vinaigrette, divided
  • 1 pkg. (6 oz.) fresh baby spinach
  • 2 med. tomatoes, cut into wedges
  • 4 oz. feta cheese, crumbled or cubed
  • 1 c. pitted Greek olives
  • 1 small red onion, thinly sliced






  1. Cut pita breads into strips; arrange in a single layer on an ungreased baking sheet. Combine oil, salt and pepper in a small bowl; brush over pita strips. Bake at 400 degrees for 8 - 10 min. or until crisp, turning once.
  2. Cook Beef in a large skillet over medium heat until no longer pink; drain. Add 1/4 c. vinaigrette. Arrange spinach on a serving platter; top with tomatoes, cheese, olives, onion and beef mixture. Drizzle remaining vinaigrette over salad. Serve immediately with toasted pita strips.
