Serves 4
- 2 Whole pita breads
- 2 Tbs. olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper 3/4 lb. ground beef
- 3/4 c. Greek vinaigrette, divided
- 1 pkg. (6 oz.) fresh baby spinach
- 2 med. tomatoes, cut into wedges
- 4 oz. feta cheese, crumbled or cubed
- 1 c. pitted Greek olives
- 1 small red onion, thinly sliced
- Cut pita breads into strips; arrange in a single layer on an ungreased baking sheet. Combine oil, salt and pepper in a small bowl; brush over pita strips. Bake at 400 degrees for 8 - 10 min. or until crisp, turning once.
- Cook Beef in a large skillet over medium heat until no longer pink; drain. Add 1/4 c. vinaigrette. Arrange spinach on a serving platter; top with tomatoes, cheese, olives, onion and beef mixture. Drizzle remaining vinaigrette over salad. Serve immediately with toasted pita strips.
