Fiesta Corn Chip Salad

Prep/ Total time:  10 min.     Serves:10








  1. Combine 2 cans (15 1/4 oz. each) whole kernel corn, drained; 2 cups (8 oz.) shredded Mexican cheese blend; 1 med. sweet red pepper, chopped; 1 cup mayonnaise; 1/8 tsp. salt and 1/8 tsp. pepper in a large bowl. Chill until serving. stir in 1 pkg. (9 1/4 oz.) chili cheese-flavored corn chips, crushed, just before serving.
NOTE: Add beans and top with sour cream if desired.

$1.12 per serving.
