Easy mac & cheese veggie chicken casserole



MAKES 6 servings

  • 4 Tbs. butter, melted, divided
  • 1 c. 2 % milk
  • 8 oz. rotini pasta, cooked and drained
  • 2 c. diced, cooked chicken
  • 4 c. frozen vegetables, thawed
  • 2 1/4 c. shredded cheddar cheese
  • 1/4 c. dry bread crumbs
  • 1 Tbs. grated parmesan cheese




  1. Preheat oven to 400 degrees. Combine 3 Tbs. of butter with the milk, pasta, chicken, veggies and cheddar cheese in an 8-in. baking dish.
  2. Combine bread crumbs, parmesan and remaining butter in a small bowl; sprinkle on top. Bake 30 min. or until heated through.
