- Scrub 1 1/2 lbs. med. potatoes; Cut into 1 in. cubes. Place potatoes and 2 Tbs. water in a large microwave-safe bowl. Cover and microwave on high for 3-4 min. or until crisp-tender, stirring once. Drain. Add 2 Tbs. butter, melted; 2 Tbs. grated Parmesan cheese; 2 Tbs. onion soup mix and 1/8 tsp. pepper. Toss to coat. Place on a double thickness of heavy-duty foil (about 18 in. square). Fold foil around potato mixture and seal tightly. Grill, covered, over med. heat for 8-10 min. or until potatoes are tender. Open foil carefully to allow steam to escape.
