Salsa Verde Chicken Salad Quesadilla

Salsa verde is a green salsa typically made with tomatillos, green chilies or jalapeno peppers and cilantro. This tangy sauce will tickle your taste buds!


MAKES: 4 servings


  • cooking spray
  • 4 (8 in.) flour soft tortillas or ( wheat soft tortillas )
  • 1 c. refried beans
  • 3 c. cooked chicken (from 2 to 2 1/2 lbs. chicken)
  • 4 Tbs. diced jalapenos
  • 2 c. iceberg lettuce, shredded
  • 2 c. Mexican cheese or Cheddar cheese mix, grated
  • 1 c. salsa verde









  1. Heat large skillet over med. heat. Spray outside of tortilla with cooking spray and place into skillet with oil side down.
  2. Spread 1/4 c. refried beans on one side of tortilla. Add 1 c. of chicken on top of refried beans. Add 1 Tbs. jalapeno, 1/2 c. lettuce and 1/2 c. cheese.
  3. Fold half of tortilla over filled side of tortilla. Allow heating until cheese begins to melt. Flip over quesadilla and continue to heat other side until golden brown.
  4. Repeat with remaining tortillas and ingredients.
  5. Allow quesadillas to rest on cutting board about 5 min. before slicing into wedges and serving with salsa verde.
