All about ICE CREAM SANDWICHES!

It's getting warm outside, stay cool with these yummy ice cream sandwiches!! It's really easy to make your own ice cream sandwiches, and when you prepare them at home, the creative possibilities are endless! Here are 10 amazing ideas that will serve as an inspiration. Including sandwiches with jalapeno, an after hours sandwich for adults only and bacon! Yes...I said BACON!


Sicilian Ice Cream Sandwiches

Prep: 20 min. + freezing     Serves: 4






  1. Melt 1/2 c. miniature semisweet chocolate chips and 1 tsp. shortening in a microwave; stir until smooth. Set aside. Toast 4 split miniature croissants. Spread cut sides of croissants with 1/4 c. Nutella. Scoop pistachio gelato onto croissant bottoms. Arrange sliced maraschino cherries over gelato. Replace croissant tops. Combine 1/3 c. pistachios, coarsely chopped, and 1/3 miniature chocolate chips in a shallow bowl. Press into sides of sandwiches. Drizzle with melted chocolate. Top each with a cherry. Place on a baking sheet to freeze.

  1. Melt 4 oz. bittersweet chocolate, chopped, in a microwave; stir until smooth. Combine 1/4 c. chopped walnuts, toasted; 4 dried figs, finely chopped; and 1/4 tsp. minced fresh thyme. Top 4 pizzelle cookies with a heaping scoop of vanilla ice cream. Sprinkle with 1/2 of the walnut mixture and drizzle with melted chocolate. Combine 1/2 c. Mascarpone cheese and 1/2 tsp. balsamic vinegar. Spread over 4 cookies; place over tops of sandwiches. Press remaining walnut mixture into sides. Wrap in plastic wrap to freeze.

Blueberry-Lemon Ice Cream Sandwiches

  1. Brush 4 slices pound cake with about 1 Tbs. Jeremiah Weed Sweet Tea Vodka. Spread 1 c. lemon sorbet, softened, over 2 cake slices. Spread 1 c. blueberry crumble ice cream, softened, over remaining slices. Sandwich sorbet and ice cream topped cake slices. Cut sandwiches in half. Drizzle with 3 oz. melted white baking chocolate. Place on a baking sheet to freeze.

Candy Craze Ice Cream Sandwiches

  1. Place a scoop of Whopper's Ice Cream on each of 4 large chocolate chip cookies. Top each one with another cookie, a scoop of peanut butter ice cream with peanut butter cup pieces and another cookie. Press 1/2 c. each Reese's mini peanut butter cups and M&M's miniature baking bits into sides. Wrap in plastic wrap. Place on a baking sheet to freeze.

  1. Dip 8 pretzel crisps into 2 oz. melted chocolate candy coating; allow excess to drip off. Place on waxed paper; let stand until set. Spread 1 tsp. marshmallow crème over the bottom of wach pretzel crisp. Scoop chocolate ice cream onto half of the pretzel crisps. Drizzle with 2 tsp. warmed caramel ice cream topping and top with remaining pretzel crisps. Press 4 tsp. chopped pecans into sidea. Wrap in plastic wrap to freeze.

  1. Combine 3 Tbs. each Cap n' Crunch, Fruit Loops and Fruity Pebbles cereal in a bowl. Cut 4 Rice Krispies Treats (3.12 oz. each) in half lengthwise. Spread 1/4 c. dulce de leche caramel ice cream, softened, onto the bottom half of each Rice Krispies Treat. Drizzle with 4 tsp. warmed caramel ice cream topping. Replace top half of Rice Krispies. Roll sides in cereal mixture. Place on a baking sheet to freeze.
