Summer Fish Skillet

On busy nights when you have big fish to fry, this fresh tasting combo will offer just the meal hour help you needed!

Prep/ Total time: 30 min.  Serves:4


  • 2 pkgs. (7.6 oz. each) frozen lemon butter grilled fish fillets
  • 1 Tbs. olive oil
  • 2 med. yellow summer squash, halved and sliced
  • 2 med. sweet orange peppers, chopped
  • 1/2 c. chopped red onion
  • 2 c. fresh salsa, drained
  • 4 oz. feta cheese, cubed
  • 2 pkgs. (8.8 oz. each) ready-to-serve rice pilaf with orzo pasta









  1. Cook fish fillets in oil in a large skillet over med. heat, for 15-20 min. turning once, or until fish flakes easily with a fork; remove and keep warm
  2. Saute squash, peppers and onion in the same skillet until tender. Add salsa; cook 2 min. longer. return fish to skillet. Add cheese and heat through.
  3. Prepare the rice pilaf according to package directions. Serve with fish and vegetables.
