Garlic rainbow chard with couscous STEP BY STEP W/ PICTURES!

So, I am very excited to share this new recipe with you because not only is it super healthy but it is easy and delicious! I just made this yesterday and I am loving it!! I will give you step by step instructions, with pictures. Trust me, anyone can cook healthy, and I'll show you how!


Total Time: 20 min Serves 4

INGREDIENTS:
  • 1/2 box quick cooking couscous
  • 1 c. corn kernals (from 1 ear or frozen and thawed )
  • 2 Tbs. olive oil
  • 1 med. onion, chopped
  • 1 bunch rainbow chard ( about 1 lb. ), stems sliced and leaves cut into 1 in. thick strips
  • 4 cloves garlic, finely chopped
  • salt and pepper
  • 1/4 c. grated parmesan/ plus more for serving



First thing that you want to do is cook your couscous, according to package directions, I use quick cooking couscous that cooks in 5 min. as pictured below.


After that, heat some oil in a large skillet, you can use regular olive oil like the recipe states or I used a garlic infused olive oil because this is going to be a garlicky meal anyway,

 
While your oil is heating up, go ahead and slice your chard stems.
 
 
 

Aren't they pretty?? :-) At this point you would chop up your onion as well. Note: I did not use onion because my husband is highly allergic. Add your onion and chard stems to the skillet with the heated oil and cook, covered, stirring occasionally on medium  heat until tender. (About 5 to 6 min.)




Next you want to add your garlic, you can use whole garlic cloves as stated or I buy an organic pre-chopped garlic, it's completely up to you!

 
 
Continue to cook for about 2 min. while stirring so that your garlic doesn't burn.
 
 
Now, Let's start on those chard leaves! You're going to want to cut out the remainder of that hard stem in the middle, and then roll the leaf up like a sushi roll!
 
 
 
 
Now take your knife and cut into 1 in. thick strips:
 






REMEBER: Rainbow chard is sandy, so make sure you put it in a bowl and give it a nice good rinse! No one wants gritty sand in their food!
 


 
 
Now throw those chard leaves in the skillet! Make sure you season with salt and pepper, about a 1/2 tsp. salt and 1/4 tsp. pepper or you can just eyeball it like I do. ;) Let it cook, stirring occasionally, until just tender, which is about 3 min.
 
 
 
 
 
 
Now time to toss in our corn:
 
 
 
Our couscous:
 
 
 
 
Our parmesan:
 
 
 
 
 
 
 
 
And a 1/4 c. of water:
 
 
 
 
 
Note: Add more water, 1 Tbs. at a time, if the mixture seems dry.




 
mix it all up together and you are DONE! and boy is it delicious!
 
 
 
 
 
And if you love cheese as much as I do, you can sprinkle some of the remaining parmesan on top!
